Chocolate is the product of a very long refining
process that begins with the cacao bean, the fruit of the tropical tree
known as Theobroma cacao. The beans are fermented, dried and roasted, then
ground into a compound called chocolate liquor. This mixture is then pulverized
and separated into cocoa power, which gives chocolate its intense flavor,
and cocoa butter, a smooth solid fat which gives chocolate its rich and
creamy smoothness.
Chocolate type is determined by the amounts of
cocoa powder and cocoa butter that are used in the formulation of the product,
as well as the amount of sugar and any other ingredients that might be
added to the mixture. The following terms explain the most common varieties
of chocolate.
Unsweetened Chocolate (also known as “bitter”
or “baking” chocolate)
Like its name suggests, this is pure chocolate liquor,
composed purely of ground cocoa beans. It looks and smells like chocolate,
but it has an unpleasant bitter taste that is not meant for consumption
on its own. It is used in cooking, as the base ingredient for all forms
of chocolate, except for white chocolate.
DARK CHOCOLATE
Chocolate that contains cocoa
powder, cocoa butter, sugar, vanilla and lechithin (an emulsifier). There
are no milk solids in dark chocolate. The cocoa content of commercial dark
chocolate ranges from upwards of 80% down to 30%, which determines which
name is most commonly used describe the product:
- Bittersweet Chocolate – 60% or higher
This
chocolate has the deepest and richest flavor, bringing out both strong
and subtle characteristics of the beans’ origin and quality. The Chocolate
Traveler Bittersweet has a 70% cocoa content and is processed and blended
in Belgium.
- Semi-sweet Chocolate – 40 to 60%
This is primarily an American term, popularized by chocolate chips.
It is generally assumed to be lighter and sweeter than Bittersweet,
although terminology is not consistent across brands and comparisons
are relative. The Chocolate Traveler Dark Chocolate products contain
approximately 55% cocoa.
- Sweet Dark Chocolate – 20 to 40%
This chocolate is identified by the high percentage of sugar it contains,
without the deep flavor associated with European quality standards.
The Chocolate Traveler does not use this type of chocolate in any of
its products.
MILK CHOCOLATE
In addition to the ingredients in dark chocolate, milk chocolate contains either
condensed milk or dry milk solids. It is typically much sweeter than dark
chocolate, and has a lighter color and a less pronounced chocolate taste.
Chocolate Traveler milk chocolate contains whole milk powder and milk fat
for an exceptionally creamy quality.
WHITE CHOCOLATE
This chocolate contains cocoa butter but no cocoa solids
or powder. Therefore there is no chocolate taste or color, but sugar, milk
solids and flavorings are added to give white chocolate a milky sweet flavor.
In addition to whole milk and milk fat, Chocolate Traveler white chocolate
contains natural vanilla for an authentic rich taste.
